JOB ADVERT – CHEF TRAINER
(1 POSITION)

Mwiba Holdings Limited is a registered Tanzanian company under the Companies Ordinance (Cap. 212), as well as under TIC, and receives the Certificate of Incentive NO. 032235. The company is registered under TIN 107 141 103, and our operations are based in Arusha, Meatu-Simiyu, and Mara Regions. We are currently looking for a Chef Trainer to be part of our team.

Overall Role:
The Chef Trainer will be head of training in the food and beverage department. This role involves training our company chefs to meet the company’s cuisine standards and introducing an international menu to be adopted by all chefs in the company’s camps and lodges.

Key Responsibilities:

  • Train all kitchen staff on kitchen and closing procedures, ensuring hygiene and stock standards are well observed.
  • Create vegan, vegetarian, lactose-free, and gluten-free menus for international guests. Train staff on these options for every set menu.
  • Train staff on stock control procedures and related administration (FIFO).
  • Create and train on new dishes, ensuring that there is no overlap between the current camps and lodges.
  • Introduce and design a light and interesting menu, moving away from traditional safari menus.
  • Maintain and introduce new products to onsite herb gardens.
  • Review current menus and make adjustments or revamps as needed.
  • Train staff on health and safety in the kitchen and hygiene standards in line with TFDA (Tanzanian Food and Drug Administration) regulations.
  • Work on and introduce food cost calculations, keeping price for each item, usage, and advising the team to minimize wastage.
  • Develop and implement SOPs to ensure consistency, safety, and quality in all setups, including bush meals, picnics, hot boxes, food, and service.
  • Structure kitchen workflow and staff roles to enhance efficiency and productivity.
  • Oversee unique initiatives that may require additional training and resources, such as special guest experiences, seasonal promotions, logistics, or greenhouse projects.
  • Ensure kitchen equipment is regularly serviced and repaired as needed to prevent downtime.
  • Assist in managing the supply chain for ingredients and materials, including ordering, receiving, and storing products efficiently.
  • Provide guidance and support to aspiring chefs, helping them develop their skills, creativity, and confidence in the kitchen.

Qualifications:

  • Culinary Education (Diploma or Degree) or equivalent experience.
  • Minimum 5 years in a professional kitchen, with at least 3 years in a leadership or training role.
  • Certification in food safety and hygiene (preferably TFDA certified) is optional.
  • Culinary expertise in cooking techniques, food preparation, and presentation.
  • Ability to create and adapt menus, including dietary options (vegan, vegetarian, gluten-free).
  • Strong organizational skills (inventory management, stock control, ordering).
  • Excellent communication and teamwork skills.
